Steak & Goat Cheese Frittata

Everyone has eggs in the fridge most of the time and finding other staple items to throw in an omlette makes breakfast the next day very intersting.  I had some leftover steak bits and a small log of goat cheese!  Boom, "She Readdddyyy" in my Tiffany Haddish voice.

How to Make it:

6 Large Eggs

2 Tbsp of melted butter

1/4 Cup of sliced or diced steak (or any meat you have available)

2-4 oz Goat Cheese

Green Scallions ( separated by white and green parts)

Salt and Pepper to taste
 

Instructions:

Preheat oven to 350 degrees Fahrenheit

In a oven safe pan, melt 2 tbsp of butter and begin to saute the whites of the scallions.

Then toss in steak bits, since they are already cooked, I just warmed them up slightly in the pan.  Always add the heavy stuff on the bottom of a frittata because eggs are light and fluffy. 

Pour in the scrambled 6 large eggs

Then add chunks of the goat cheese and the green parts of the scallions on top

Place in the heated oven for 25-30 minutes until it's set throughout and goat cheese hot and bubbly.

Have with toast or byitself.  Enjoy!
