Oysters and Champagne

I discovered I loved oysters on a dare!  I was out on a couples date night and a friend invited me to have the perfect bit of her oyster, I refused the first few times, but on the third attempt I said "let's do it".  It was literally love at first bite.

Now I have to explain the perfect bite:  First you start off with a saltine cracker, add your oyster with all of its juicy goodness, add a touch of freshly grated horseradish, add the best red cocktail sauce you can get your hands on, then a squirt of fresh lemon juice.  Open wide and enjoy!

I know this seems like a lot of work to repeat for every bite, but believe me it's worth it!!!!  Pair this soiree with an amazingly crisp champagne served in chilled glasses and you have yourself a fancy dinner without the reservations.

We usually make this a date night in, but if you can't find a sitter, make it a family event.

Shucking large amounts of oysetrs is a breeze since I discovered this beauty on Amazon!! So easy to use, even my son can do it. 

I only let my baby boy try just a couple.  Probably not the best to let him eat his fill of raw seafood, but letting him expand his palate makes me happy. 

He also enjoys helping daddy shuck oysters in the kitchen.

Find a great fresh seafood place or go to your local Whole Foods and pick up a bunch with freshly grated horseradish, fresh lemons, and delicious cocktail sauce, done.  And don't forget saltine crackers.
